Good olive oil shouldn't just be mild. It should taste of fruit, origin, and processing. For extra virgin olive oil, sensory quality is a central part of its classification.
What many perceive as unusual – bitterness, pungency, and green intensity – is often precisely what distinguishes a vibrant oil from a flat, standard oil.
The three positive attributes
Professional assessment of extra virgin olive oil is based on both chemistry and sensory evaluation. In the sensory part, three positive attributes are particularly important:
- fruitiness
- bitterness
- pungency
Furthermore, an extra virgin olive oil must be free from sensory defects. It's not enough for the oil to have a low acidity level on paper. It must also taste and smell clean.
Fruitiness: the olive's green or ripe expression
Fruitiness is the oil's fundamental aroma and taste of fresh olive fruit. It can lean towards green or ripe depending on the olive variety, harvest time, and origin.
Green fruitiness can be reminiscent of:
- freshly cut grass
- green tomatoes
- artichoke
- green almonds
- olive leaves

Bitterenss: not a defect
Bitterness in olive oil is not the same as rancidity or bad taste. In extra virgin olive oil, bitterness is a positive attribute when it is clean, balanced, and linked to fresh fruitiness.
Bitterness largely comes from phenolic compounds, where oleuropein and its derivatives are particularly relevant. Therefore, bitterness is often more pronounced in high-polyphenolic olive oil.
A completely mild oil can be pleasant, but it tells less about phenolic structure. For those seeking documented polyphenol content, a certain bitterness is often part of the package.
Pungency: the sensation in the throat
Pungency is the stinging or warming sensation in the throat after tasting the oil. Sometimes it can cause a slight cough. This is normal for many oils with a clear phenolic profile.
Pungency is often linked to oleocanthal, one of the most recognized phenolic compounds in extra virgin olive oil.
For CORE, pungency should feel like structure and finish, not aggressive heat. It should carry the flavor forward after swallowing.
Defects: what the oil should not have
An extra virgin olive oil should be free from sensory defects. Common defects include rancidity, moldy notes, fermented notes, vinegar characteristics, or a metallic sensation.
Defects can arise from damaged fruit, too long a time between harvest and pressing, poor hygiene, improper storage, or oxidation.
That is why rapid pressing, low temperature, dark packaging, and correct storage are important. Quality is a chain, not a single word on the label.
How to taste olive oil
You don't need to be a sensory panelist to better understand an oil. Try this:
- pour a small amount into a glass or onto a spoon
- gently warm the glass in your hand
- first, smell for grass, tomato, almond, or olive leaves
- take a small sip and let the oil coat your tongue
- note any bitterness on your tongue
- swallow and feel for pungency in your throat
Feel free to compare it with a mild store-bought oil. The difference often becomes clearest when two oils are tasted side by side.
Taste and analysis belong together
Taste does not replace laboratory analysis. But taste can provide clues about freshness, harvest time, processing, and phenolic structure.
HPLC analysis provides the number. Sensory evaluation explains why the number is noticeable in the mouth.
For Vala Selection, both are important. CORE should have a documented polyphenol level, but also a flavor profile that ensures the oil is actually used.
How CORE should be experienced

- green fruitiness
