Olives are harvested around Vela Luka on the island of Korčula in southern Croatia — a recognised PDO origin for olive oil. Ante coordinates harvesting, pressing and collaboration with local OPG growers on Korčula. Olives reach the mill within 24 hours of harvest and are cold-pressed immediately. The short handling time is critical to preserving polyphenol content. Polyphenol analysis is performed by HPLC at the University of Split after bottling.
