Oleocanthal in olive oil

Oleocanthal is one of the most talked-about polyphenols in olive oil. It is strongly linked to the peppery sensation in the throat often noticed in a fresh, well-made extra virgin olive oil.

For Vala Selection, oleocanthal is interesting for two reasons: it tells something about the oil's sensory character, and it is part of the broader polyphenol profile that we document with HPLC analysis.

What is oleocanthal?

Oleocanthal is a natural phenolic compound found in extra virgin olive oil. Chemically, it belongs to the group of secoiridoids, a type of substance characteristic of the olive family.

Oleocanthal forms and changes through the olive's ripening, harvesting, milling, and pressing. Therefore, the content varies between olive varieties, harvest years, pressing days, and storage.

It is important to distinguish between two things:

  • the presence of oleocanthal as part of the oil's polyphenol profile
  • exact quantification of oleocanthal as an individual compound

Vala Selection communicates total polyphenol content at the batch level. Individual compound values can be method-sensitive and should not be detached from the analytical context.

Why does oleocanthal feel peppery?

The typical sensation from oleocanthal often sits in the throat rather than on the tongue. It can come a few seconds after the oil is swallowed and is experienced as a peppery, warm finish.

It is not a flaw and not a sign of defect. In a pure extra virgin olive oil, that sensation can be a sensory signal of freshness and polyphenol-rich character.

An oil without a distinct peppery finish can still be good, but it often has a different polyphenol profile. Milder oils are often made from later harvested olives, other varieties, or oils that have lost more of their phenolic structure due to time, oxygen, light, or heat.

Oleocanthal and quality

Oleocanthal should not be used as the sole mark of quality. A high-quality olive oil also needs to be sensorially pure, extra virgin, correctly stored, and traceable.

But in combination with other factors, oleocanthal can say a lot:

  • early harvest tends to favor a more pronounced polyphenol profile
  • fast pressing helps preserve delicate compounds
  • dark glass and correct storage reduce degradation
  • a distinct throat sensation can support the image of a fresh oil

That is why the peppery sensation is relevant. It is not the entire quality assessment, but it is an important part of the sensory whole.

The Beauchamp study and the ibuprofen comparison

Oleocanthal gained widespread attention after a study published in Nature in 2005 by Gary Beauchamp and colleagues. The researchers noted that oleocanthal produced a throat sensation similar to that of ibuprofen.

The study also showed that oleocanthal in the laboratory could inhibit COX-1 and COX-2, the same types of enzymes that ibuprofen affects. This is the background to the term "ibuprofen-like".

But the comparison is mechanistic, not clinical. It means that two substances can have a similar mechanism of action in a laboratory test. It does not mean that olive oil acts as a painkiller or anti-inflammatory drug.

What "ibuprofen-like" does not mean

This is important for both credibility and regulations. Oleocanthal is a food chemical compound in a food product. It is not a medicinal substance in the form it occurs in olive oil.

The fact that olive oil contains oleocanthal does not mean that:

  • olive oil treats or prevents inflammation as a disease state
  • olive oil can replace anti-inflammatory drugs
  • more pepperiness automatically leads to a specific health outcome

No food, including olive oil, should be marketed as a treatment for disease. The scientific chemistry is interesting, but the communication needs to be responsible.

Oleocanthal in Vala Selection's oil

Vala Selection's reference batch 2025-VL-MIR-001 was measured at 1,004 mg/kg total polyphenol content using HPLC at the University of Split. This value refers to the total polyphenol content in the analyzed batch.

We do not publish a separate oleocanthal value because individual compound values can vary with method, pressing day, and analytical setup. Without that context, the number risks being less informative than it appears.

What we can say, however, is that Vala Selection's style is based on early harvest, olive varieties with strong phenolic potential, and fast pressing. The peppery throat sensation is a sensory part of that profile.

Oleocanthal, oleuropein, and the polyphenol profile

Oleocanthal is not alone. It interacts with other phenolic substances, including oleuropein and its derivatives. Where oleocanthal is often linked to pepperiness, oleuropein is more clearly linked to bitterness.

Together, these substances contribute to an oil that can feel green, astringent, and structured. It is this balance, not a single molecule, that makes a high-polyphenolic olive oil interesting.
