Polyphenols are natural antioxidants found in olive oil. Most commercial extra virgin oils contain under 150 mg/kg. Pre-harvest delivers 1000+ mg/kg — achieved by harvesting the olives before full ripeness, when polyphenol concentration is at its peak. This deliberate choice results in an exceptionally bold, peppery flavour and the highest level of antioxidant richness we offer.

Pre-harvest is sold with a guaranteed minimum level of 1000+ mg/kg polyphenols. Each batch is analyzed with an HPLC test at the University of Split. If we don't reach the minimum level, it will not be sold.

Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress. The beneficial effect is obtained with a daily intake of 20g of olive oil as part of a varied and balanced diet.
