Korčula has a long tradition of small groves, local varieties and limited harvests. We see a clear gap between that kind of product and how olive oil is typically presented in retail.

That's why we work from the same logic as the wine world: batch by batch, producer by producer, with full respect for the variation between harvests. That means smaller volumes, but also greater precision.

Curation over volume

We're not looking for the most oil. We're looking for batches that hold up to open scrutiny in taste, analysis and origin.

Direct relationships with growers

The collaboration starts in the grove. That's why we can speak clearly about variety, harvest timing, pressing and actual availability.
